Dinner & a Movie: The Great Outdoors

Do you love John Candy as much as I do?  Planes, Trains, and Automobiles, Uncle Buck, and even Home Alone!  All so good but my favorite Candy movie has to be The Great Outdoors. This movie is so hilarious and epic for me on many levels: 1. John Candy’s drive to have the perfect family vacation rivals that of Chevy Chase in National Lampoon’s Vacation and epitomizes every American family’s vacation experience on some level. 2. Dan Akyroyd has some of the best one liners in this film–hands down. 3. Similar to #1, this movie is basically a compilation of experiences and stories of my own trips in the Wisconsin northwoods to our lodge. In the wintertime, nothing beats a thick steak with a bourbon sauce and a big baked potato. In the summertime, I want my steak sliced, rolled up in a charred tortilla, with fresh lime squeezed all over it. Right now I want more summer in my life. I couldn’t resist throwing these tacos together on our first true night of summer. Now, since that day it’s been either raining or in the 50’s.  I hope when you make these tacos, they don’t have that sort of effect on your weather for the next two weeks. Grilled Steaks with Bourbon Peppercorn Sauce

Vegetarian I am not.  Steak lover I am. The end. Just kidding. You know those expensive, special occasion only steakhouses where everything is a la carte?  There is one in particular in downtown Milwaukee that even has red carpet and brass stanchions. Awhile back I needed a steak.  Bad. I didn’t need the big salad or the enormous side of potatoes.  I just needed a seared piece of beef with a delicious sauce.  I was also in sweats and looking “lovely” after spring cleaning all day.  *insert sarcasm here* There was no way we were going out for dinner…least of all walking the red carpet to get my fix. I took a look in the fridge, intended on grilling steaks one night that week already, and came up with this sauce.  I’m a firm believer in condiments and sauces if it enhances, rather than masks what you are eating.  A good steak, seared and covered simply in salt and black pepper is absolutely delicious on its own–no doubt about it. Guinness Bacon Shepherds Pie

This past week there was a great deal at the grocery store and we got 1lb of ground beef for free.  I’ve been leaning towards making a shepherds pie out of it and today was perfect since it was so cold and rainy.  Below is my interpretation of a recipe that inspired me.  Hope you like it! {Guinness Bacon Shepherds Pie}Adapted from Rachel Ray 1 c. Guinness Fresh thyme sprigs 4 slices bacon, chopped 1 lb ground beef 1/2 c. each: diced carrots, peas, and diced onions 1/2 tsp. fresh thyme 2 tsp. dijon mustard 2 tbsp. butter 2 tbsp. flour 1 c. beef stock 1 tbsp. Worcestershire sauce 2 c. mashed potatoes (I had frozen sliced potatoes that I heated and mashed with warm milk and butter.  You can use instant or make them homemade.  I just did what was easiest.) 1/4 c. crumbled gorgonzola cheese Salt & Pepper Smoked Paprika Heat oven to 375°.
